  • Story

    Three hours southeast of Yirgacheffe in the Oromia region of Southern Ethiopia, Uraga is a unique area home to the Yabitu Koba Cooperative Society. Harvested by 720 families, the coffee is brought to the Hana Asrat washing station. The cherries from Yabitu Koba are known for their washed processed coffee. The cherries are fermented for 24-48 hours before being washed in concrete channels and dried on raised beds.

    Before putting the cherries out to dry on the raised beds directly in the sun, the freshly washed coffee is first placed on raised beds under netting to allow for the first round of hand sorting and drying. This step is a critical process that helps the cherries dry more slowly, allowing the coffee’s acidity and sweetness to be attained -a flavor we love celebrating in Uragan coffee.
