For nine years, we’ve sourced coffee from Roberto Sabillón’s Miraflores farm in Santa Bárbara, Honduras, a region known for exceptional high-elevation coffees. Miraflores is located in the Santa Bárbara region of Honduras, nestled among other coffee-producing farms at elevations above the national average. These conditions are ideal for growing high-quality coffee. Year after year, Santa Bárbara delivers some of the most captivating coffees in Honduras, and Miraflores has been a consistent highlight.
What truly sets this coffee apart is the anaerobic fermentation method, where the cherries are fermented in sealed tanks with limited oxygen. This controlled environment intensifies the coffee’s character, enhancing the natural sweetness of the Pacas variety and creating a dynamic, harmonious cup.
