Grown between 1,550 and 1,800 meters at Finca El Hato in Guatemala’s Fraijanes region, this Maracaturra is processed using the natural method. The cherries remain intact throughout drying and are regularly turned to promote even drying and prevent spoilage, allowing fermentation to take place within the fruit surrounding the seed.

At Finca El Hato, Antonio Gonzales manages cultivation while his wife, Eby, leads the farm’s processing. For this natural Maracaturra, Eby worked alongside an all-women team to carefully manage each stage of cherry drying, a process that requires close attention and regular movement as the fruit dries.
Natural processing also offers Antonio and Eby a way to reduce production costs on the farm. Those savings allow them to reinvest in resources for nearby producers, helping cover the cost of materials while supporting coffee production within their community.
