Farmlevel Story
Sisters Hirut and Mahder Birhanu acquired an abandoned washing station in 2010 in Dumerso, Yirgacheffe to provide a washing station for local farmers. With 20 years of experience in production themselves, the Birhanu sisters successfully reopened Dumerso washing station in 2013, providing the vital fair prices and skilled careful coffee processing to add value for the farmers who process there.
Farmers selectively handpick ripe, red cherries to deliver to Dumerso washing station, where it is inspected and pulped on the station’s disc pulper. Coffee is then fermented for 36 to 48 hours, then washed in clean water. Parchment is laid on raised beds to dry and raked frequently to ensure even drying. The parchment is also covered during the hottest part of the day and overnight to prevent condensation, and takes about 7 to 10 days to dry
