When crediting our Latin American producers, we typically refer to a single person. The name often indicates the landowner who cultivates coffee trees and is directly accountable for the quality of the produce. In the case of the Calderon family, it is impossible to credit just one of them.
Don Omar Calderon diligently manages the family’s seven farms. The three Calderon sisters—Yoanna, Diana, and Yoxise—oversee the processing at their micro-mill. And Doña Yorleni treats her guests to coffee brewed with a traditional cloth dripper in their family’s kitchen.
This catuai selection comes from their 1800 MASL farm known simply as Ortiz 1800. Once the ripe cherries arrive at their micro-mill, a finely-calibrated depulper and demucilager remove the pulp and skin. The patio drying process takes 10 to 12 days.
