Behind The Cup

This lot comes from the Ortiz 1800 farm in Santa María de Dota, where high elevation and the White Honey process combine to emphasize clarity and sweetness. By leaving a portion of mucilage on the parchment during drying, the White Honey method enhances roundness while maintaining a clean, transparent cup. Green Apple and Nectarine notes stay bright and focused, supported by a Simple Syrup sweetness that brings cohesion and balance. Rather than pushing intensity, the profile leans into evenness and polish, making it an easy entry point into specialty coffee while remaining satisfying for experienced drinkers.

Farmlevel Story


The Calderón family has been a long-time Verve partner whose coffee legacy begins with Ricardo Calderón, the family’s grandfather, who inherited the first parcels of farmland from his father and gradually expanded the holdings over time. His brother, Omar Calderón of Granitos de Ortiz, remains an important part of the family’s coffee tradition. In the early 2000s, the Calderóns became pioneers of Costa Rica’s Micro-mill Revolution, leaving the Coopedota cooperative to build their Los Angeles micro-mill—one of the region’s earliest private mills. This shift allowed them to process their own coffee, maintain full control over quality, and develop direct relationships with roasters.


Based in Santa María de Dota in Tarrazú, the family oversees a strong network of farms, including high-elevation sites densely planted with Red Catuai. A close-knit team, the Calderóns divide responsibilities with precision: Don Omar manages the family’s seven farms, while his sisters—Yoanna, Diana, and Yoxise—run the micro-mill. At the heart of the home is Doña Yorleni, known for welcoming visitors with coffee prepared in a traditional cloth dripper. This lot from the Ortiz 1800 farm reflects the family’s shared dedication to quality, balance, and tradition across generations.
