FARMLEVEL STORY

One of our favorite Ethiopian washing stations, Genji Challa represents the harvests of approximately 400 smallholder farmers who deliver freshly picked coffee from as high as 2,200 meters above sea level on surrounding slopes.

Leveraging a Penagos eco-pulper, a Colombian de-mucilage technology capable of washing coffees using only 1 liter of water for every kilogram of coffee, Genji Challa produces remarkably clean and nuanced coffees without taxing Western Ethiopia’s limited resources. After pulping, demucilaging, and soaking, Gera’s Technoserve mills use an additional technique that sets their coffees apart. Before exposing coffee immediately to direct sunlight, coffees are dried on shaded beds and continuously stirred by hand to enable a more gradual temperature change believed to strengthen and intensify flavors.
