Behind the cup
White honey processing retains a measured amount of mucilage during drying, building sweetness while maintaining clarity. At elevations above 2,000 meters, slow maturation refines the coffee’s acidity and structure, resulting in a balanced profile with citrus lift and soft, rounded sweetness.
Each coffee is roasted to order. Orders ship within 2 business days.

Farmlevel Story

The Gamboa family has been growing coffee in Tarrazú since the late 1800s, but their Montes de Oro micro-mill represents a more recent chapter in that history. Established in 2006 and managed today by Emilio “Milo” Gamboa and his wife Laura, the mill allows the family to process coffees from their four farms with close attention to quality and consistency.
Finca El Yasal sits at the highest elevation in the Gamboa family’s portfolio, between 2,050 and 2,100 meters above sea level in Ojo de Agua. Originally a cattle property purchased in 1980, the farm was planted with coffee beginning in 2010 as the micro-mill movement reshaped Tarrazú’s specialty landscape. Today, only five of the farm’s fifty hectares are dedicated to coffee, with cherries delivered to the Montes de Oro mill for careful processing and raised-bed drying.
