At 1,960 meters in the Cauca highlands, Diego’s meticulous approach begins with overripe cherry selection to intensify fruit esters. Cherries are disinfected with ozone, fermented anaerobically, and inoculated with his proprietary Paraiso Red Fruit yeast before a final thermal shock rinse locks in aromatics. The result is clarity and complexity in perfect balance.

Drying in a dehumidifier preserves the coffee’s delicate structure, protecting against overoxidation while maintaining soft fruit notes. Every stage reflects Diego’s devotion to precision and his fusion of art, microbiology, and taste.
