This lot has become a Verve favorite year after year, beloved for its expressive aromatics that shine through without being overly ferment-forward. Grown at high elevation in Nariño and processed naturally, the coffee benefits from slow fermentation and extended drying in a cool climate, allowing fruit and floral notes to build density while staying clean. The result is a cup that feels vibrant and layered, shaped as much by regional conditions as by the producers’ steady refinement of natural processing.

Farmlevel Story

This natural lot highlights the work of smallholder producers from the municipality of Chachagüí in Nariño, specifically the veredas of San Juan and Sánchez. Coffee here is grown on steep, high-elevation hillsides shaped by the Galeras volcano, where mineral-rich soils and cool temperatures contribute to the region’s distinctive cup profiles. Many farms are accessed by narrow, unpaved roads, making cultivation and transport physically demanding and deeply hands-on. Generations of farming knowledge, paired with a strong connection to land and environment, define coffee production across the area.
This coffee brings together Castillo and Caturra cherries from producers Jorge Luis Erazo Ascúntar, Isabel Cristina Revelo Canchala, and Jose Ernesto Burbano, each contributing their own approach to natural processing. Cherries were selectively handpicked at peak ripeness, then fermented with careful attention to time and temperature. Fermentation lengths vary by producer, ranging from two to four days, reflecting individual experience and experimentation rather than a single prescribed method. Drying takes place on patios and in parabolic dryers over an extended period, allowing moisture to leave the coffee gradually in Nariño’s cool, high-altitude climate. Together, these techniques form a cohesive expression of Chachagüí, shaped by elevation, volcanic soil, and the intentional choices of producers committed to quality.
