We are always looking into new varieties and processes in order to have more offerings for our clients. So, we are on the continuous lookout to what is trending in the coffee market in order to be up to date.About 10 years ago, we started hearing about the Pacamara variety and we started cupping it in different occasions. We were immediately intrigued by its different flavors and attributes. Not to mention its quality overall. We convinced ourselves to plant the variety in the farm 6 years ago. We got the seed from a friend in El Salvador, and we did our first nursery in a farm called Carrizalito. (This farm is great for nurseries because of its microclimate) We only have a small amount of Pacamara trees planted in Santa Clara, about 1.4 hectares. The plantations are in one of the highest areas of the farm. It’s located between 1,750- 1,850 masl. In this variety’s case, all our lots are special picking and they are all patiently dried in our greenhouses. We aim to dry all our lots in no less than 20 days. This slow drying not only improves the quality of the cup but also the shelf life of our green coffees. Last year, we did Pacamara cascara tea and experimented first time with anaerobic fermentation with one of our Pacamara lots. Both were a success. So far, we are very happy with this variety and it’s amazing cup profile. The Pacamara, is definitely a little treasure in Santa Clara!
This variety was developed by the ISIC (Instituto Salvadoreño de Investigaciones del Café). Its large production is seen in El Salvador. It is susceptible to disease and is known for its delicious cup and elongated beans.
