Farmlevel Story


At Finca El Diviso in Colombia’s Huila region, Nestor Lasso and the celebrated Lasso family are pushing the boundaries of processing with innovation and intent. This Sidra Reserve captures the clarity and depth that define their approach. Grown at 1,800 meters and fermented with brewer’s yeast in a temperature-controlled, anaerobic environment, this natural Sidra layers bright notes of Raspberry and Rose Hips with a deep Cherry Cordial sweetness. It’s a precise, expressive cup that reflects Nestor Lasso’s commitment to innovation and legacy.


Nestor Neffer Lasso Zuñiga is a 27-year-old producer from Normandìa, in the municipality of Pitalito, Huila. He manages Finca El Diviso, an 18-hectare farm with 15 hectares dedicated to coffee and 2 preserved as native forest. A third-generation grower, Nestor carries on the legacy of his grandfather, José Uribe, while transforming the farm into a hub for innovation and quality. Alongside his family, he’s invested in infrastructure that supports advanced processing techniques and the cultivation of unique varieties.


El Diviso now grows an impressive lineup of cultivars, including Gesha, Sidra, Bourbon Ají, Pink Bourbon, and Pacamara, totaling more than 80,000 trees. Plantain and oranges are grown as secondary crops. Depending on the lot, coffee is processed fully washed, natural, or semi-washed, and dried using parabolic beds, African raised beds, or mechanical systems.


This particular lot is a natural-processed Bourbon Sidra grown at 1,800 meters. Ripe cherries are measured at 24-26° Brix, hand-sorted, floated, and then subjected to a 50°C thermal shock. They undergo 80 hours of anaerobic fermentation in sealed jars with Saccharomyces cerevisiae yeast, held at 35°C. After fermentation, cherries are mechanically dried to reduce moisture before finishing on raised beds for about 15 days. The result is a vibrant and deeply expressive cup, showcasing Nestor’s dedication to experimentation, precision, and the future of Colombian coffee.
