As a community leader and member of ASCISP (Association of Indigenous Coffee Producers of the San Pedro Paez Reservation), Jhon Varon, along with his brother Fildardo, are part of the indigenous Nasa We’sx people who practice traditional agriculture in their village of San Pedro in Gaitania, Tolima Department. The members of this group strive to make a statement by promoting and practicing centuries-old traditions on farming, living in a balanced ecosystem and using what nature gives them. Like all other members of the group, Jhon Varon never uses chemicals on his incredibly biodiverse farm, in addition to making his own organic fertilizers by using coffee cherry pulp and farm and kitchen waste.
Jhon takes advantage of the high altitude and low temperatures that are found in Gaitania and is particular about his technique. After picking, he leaves the cherries intact overnight for 12 hours before de-pulping the next morning. He allows the coffee to ferment for another 24 hours before fully washing. This prolonged fermentation technique leads to an increased cup sweetness found in Jhon’s coffee.
