David Flores Chilcon is new to our menu but sure to be remembered. He is a younger farmer and is known for supporting his family and their coffee-growing business. His journey in coffee started by going to work with his father selling coffee, and it was there he got to see a coffee lab for the first time. His farm El Morito is home to this coffee, located near San Ignacio, in Peru's Cajamarca Region. El Morito has a micro-mill where coffee cherries are de-pulped, fermented, washed, and mucilage removed and dried on raised beds for up to 18 days. With the help of Aroma del Valle, an organization helping to bring producers coffees to specialty coffee markets, he was able to build his drying space to produce his first micro-lot.
