This wonderful natural offering comes from the kebele Daansia in the Guji region. This coffee is the work of various producers in the area that bring their coffee to the washing station or take it to a collection point. 

To ensure high quality of this lot, the cherries are sorted upon arrival by the collection agent. They look for quality by submerging the cherries in water and selecting the ones that sink for specialty grade processing. Cherries that float to the surface, commonly referred to as floaters, are separated out and processed at lower grade.The cherries are then layed out on a raised bed where they will remain for two to three weeks depending on the weather conditions.

Coffee from the Guji has become more distinct and recognized from other neighboring coffee producing regions. Coffee from Guji and the hard, tedious work of producers in the region come together to create an exceptionally high quality cup.
