Along with some of our favorite Ethiopian washing stations (including Yukro and Duromina), Genji Challa is slightly smaller than its neighbors. Genji Challa represents the harvests of approximately 400 smallholder farmers who deliver freshly-picked coffee from as high as 2,200 MASL on surrounding slopes.
Leveraging a Penagos eco-pulper - Colombian de-mucilage technology capable of washing coffees using only 1 liter of water for every kilogram of coffee - Genji Challa produces remarkably clean and nuanced coffees without taxing Western Ethiopia’s limited resources.
After pulping, demucilaging, and soaking, Gera’s Technoserve mills employ one more technique that sets their coffees apart. Rather than exposing coffee immediately to direct sunlight, coffees are first dried on shaded beds (while continuously stirred by hand) to enable a more gradual temperature change believed to strengthen and intensify flavors. This added step costs the mill days of labor and requires additional drying beds, and we’re proud to reward their commitment to quality.
