    Farmlevel

    Three hours southeast of Yirgacheffe in the Oromia region of Southern Ethiopia, Uraga is a special woreda that serves as home to the Yabitu Koba Cooperative Society. Harvested by 720 families, the coffee is brought to the Hana Asrat washing station. Known for their washed processed coffee, the cherries from Yabitu Koba are fermented for 24-48 hours before being washed in concrete channels and dried on raised beds.

    Before putting the cherries out to dry on the raised bed directly in the sun, the freshly washed coffee is placed on raised beds under netting to allow for the first round of hand sorting and drying. If the coffee is directly placed in the sun after washing, the coffee will dry too quickly, causing the loss of acidity and sweetness in this Uragan coffee that we celebrate so much for its flavor.
