It’s not often we have coffees from Nicaragua, and this coffee is a special treat. It is sweet like pure sugar cane and a delightful showcase of coffees from Nicaragua.

This coffee comes from La Bastilla Estate; more specifically, the farm is called La Hacienda. The farm is over 311 hectares, and of those, 63 are dedicated explicitly to growing specialty-grade coffee. The smallholders who grow coffee are hoping to increase their production to 170 hectares.
La Bastilla utilizes several various processes, including natural, honey, and fully washed. Washed processing makes up over 50% of their overall production. Each day’s coffee harvest becomes one or several small (micro) lots of parchment or natural dried cherries, which are carefully classified (cupped for quality) and then stored in a warehouse according to variety and internal classification. These lots then await orders for hulling/grading and export. In the end, they produce approximately 350 micro-lots each season, just like this unique offering.
