The brainchild of fourth-generation coffee farmer Luis Pedro Zelaya, the Hunapu project seeks both to isolate top-quality coffees and help Antigua's indigenous population increase their infrastructure for producing high-quality coffees.
The criteria these coffees must meet in order to bear the name "Hunapu" - meaning "mountain of flowers" - is rigid and begins with 100% bourbon variety cherries collected from amidst the mixed-shade micro-climate and nutrient-rich, volcanic soil Antigua is known for. Farmers deliver ripe, sorted cherries to Beneficio Bella Vista where they undergo a long, cool fermentation and thorough washing before being dried on raised beds.
