High in the mountains of Huehuetenango, 8 hours by car from Guatemala City, the Aguirres own and operate the formidable Finca El Injerto. The father-and-son duo at the helm of El Injerto demonstrate meticulous dedication to producing coffees that have won multiple Cup of Excellence titles and recognition worldwide.
A cross between the impeccably flavorful "Pacas", and the elephantine "Maragogype"; the "Pacamara" variety was developed in El Salvador in 1958 after 30 years of research dedicated to combining the benefits of these two varieties.
The result boasts both the large structure of its Maragogype lineage as well as the rust-resistance and all-around deliciousness from the Pacas side of the family. This auction lot is a selection from the Pandora Concepcion plot of Finca El Injerto and is fully-washed and dried on raised, shaded beds.
