Ricardo is not new to farming; in fact, he is a third-generation coffee farmer. His farm, El Progreso, is located at 1850 meters above sea level and in total is 5 hectares of land. He primarily works with varieties like Castillo and Colombia but also grows a large amount of Tabi. Over half of his farm’s annual harvest is specialty grade coffee, like this lot joining our menu.
He is known by many for meticulous processing and fermentation, where his cherries will soak in concrete tubs instead of using tanks, which is common to many producers. His coffee is then laid to dry on mechanical dryers for 30 hours.
Due to this process and every measure carried throughout harvest, his coffee is exceptional, marked by a vibrant mouthfeel and complex acidity.
