    The Santa Rosa 1900 micro-mill has done it again with this exceptional cup that is full of tart cranberry and warming sugar cane notes. We bounced along the ridges of Cordillera Talamanca in our tiny pickup truck on the road to visit Efrain and Gelberth at Finca Macho. The steep slopes are 80 million years-in-the-making thanks to Costa Rica’s tectonic plates. The nighttime temperatures on the slopes dip to a pretty chilly 46 degrees but the cooler temperatures facilitate slow cherry maturation. Using the temperature drop to their benefit, the Naranjo family has created a unique processing method. After their ripe coffee cherries are harvested from all fourteen farms, they are stored in the hopper of the Penagos eco-pulper overnight rather than immediately being depulped. This unusual pause halts any undesired fermentation while helping to create the vibrant and nuanced flavors we’ve come to love.
