Delicate but sweet bursts of pink lady apple are your first impression of this coffee. That is carried by a tart and vibrant body of pomegranate. All transcend as it cools into Ethiopian wildflower honey.

Isolated between many rows of days and cherries harvested from neighboring farms, this exceptional coffee stood out on the table: Sakaro. This coffee and introduction to their terrior marked Gedeb and their unique and delicious flavor profile.
We’re not sure if it’s thanks to the fact that coffee can be found growing as high as 2,400 meters above sea level, or the slightly greater-than-average parcel size of the Gedeb farmer (leading to a higher level of investment and ownership in his produce), or both - but we find coffees from this region to be characterized by the most dynamic bouquets of florals and warming spices of them all.
Upon receiving ripe coffee cherry deliveries from local small-holder farmers, the Sakaro washing station carries out pulping, channel-washing, and raised bed drying for 12 - 20 days.
