    Welcoming a first time offering to our menu is this delicious honey processed coffee, sure to be a staff favorite. Finca El Hato in the Fraijanes region of Guatemala is home to La Nueva Montaña and its producer Antonio Gonzales. La Nueva is de-pulped by hand and dried on raised beds. Even drying is crucial in all coffee processing to ensure distribution of water and sweetness--all of which translates into the cup. This coffee is rotated and turned up to 5 times per day to ensure quality. This process will occur from 15-17 days under shade using various trees, including Avocado trees. Natural and honey processed coffees are not only a unique and delicious flavor profile, but they also are an environmentally viable way to use less water when processing coffee. This process, in turn, can also provide more income to farmers. Antonio’s goal is to empower fellow producers around him by offering supplies at accessible prices.
