Yellow peach comes to mind when trying this coffee for the first time. It is sweet and delicate, followed by red fruits and citric throughout. If coffees could be pretty(and we think so), this profile is stunning and nuanced in every way.

This Ethiopian coffee processes so many things unique to the origin of coffee. It has delightful acidity and has fruit notes throughout the cup. It is excellent for those looking for something exciting and bright in acidity.

    Located in Harrar, the easternmost coffee-growing of Ethiopia is home to the Yonis family, responsible for this exceptional coffee. They use both washed and natural processes at their farm and recycle water due to their limited access.

    Faysel Yonis comes from a family with a long-standing history of growing coffee. He learned at an early age growing up with his mother, starting the day with coffee ceremonies in their front yard. His father owned two farms but unfortunately lost those in 1974. Faysel pursued his interest in coffee and the market in the late 90s. He started by being a representative between farmers and the local market and connected growers with the correct people to sell their coffee. After over ten years of experience, he started his coffee, which focused on sourcing specialty coffee within Ethiopia.

    The farm is surrounded by over eight hundred smallholding producers, where banana plants and trees surround their coffee shrubs. It's here that in 2017 Bishan Dimo was formed. This coffee is fermented for 24-48 hours in cement tanks. The parchment is dried for 10-12 days to ensure proper drying. The farmers have hopes to purchase more land to dry more coffee each year.
