Verve: Tell us about how you approach blend building.
Kylee: Blend building is all about creating the perfect mix of high quality coffees that have flavor profiles that highlight each other. It’s important to make sure that we're picking great coffees that work harmoniously in a blend. What is unique about a three part blend such as Wilder is that we want to bring out high, mid and low notes to completely round out a coffee, which is typically difficult to find with a single origin.
V: What makes the blend building process unique for Wilder?
K: Because Wilder is combined with two Ethiopians and a Colombian, you get to see the best representation of each coffee. It’s all about making sure that we’re not only picking coffees that are individually visible in the cup, but that the flavor profiles highlight the other coffees in the blend. Each coffee is shining a spotlight on the others.
V: How does the blend composition of Wilder translate to its cupping experience?
K: For Wilder, the Washed Ethiopian provides high florals and acids, the Colombian component gives the balanced mid level notes, and the natural Ethiopian provides an anchor with sweet chocolate goodness. Each of the three coffee components in Wilder are amazing on their own, but when put in a cup together, they shine even brighter as a whole.

V: Talk us through the tasting notes of Wilder Blend.
K: Wilder is constructed in a way that it translates to a cupping experience to hit high notes, mid notes and low tasting notes. For Wilder, you’ve got White Cherry which is the base note. Your mid note is Cantaloupe and your high note is Honeysuckle. Basically, Wilder has it all, making it the perfect blend for anyone who simply loves good coffee.
